Arisi-Roti

#ArisiRoti #Akkiroti : The dish #akkiroti is one of the favorite tiffin items of Karnataka. It is done with rice flour and dill leaves. The dill leaves ( fennel plant ) give a distinct flavour to #roti. If dill is not available coriander leaves can be used. The prepared dough has to be spread by hand. Usually for other roti dough is spread on a plantain leaf by hand and then transferred on to a hot tawa. But akki roti dough tends to break while transferring. So dough is spread on tawa itself and then cooked on medium flame. It is advisable to have two or three tawa to prepare akki roti. Some years back I have posted akki roti recipe prepared from cooked rice and rice flour.

Akki Roti [ Arisi roti ]

Ingrdients :
1 cupRice Flour
1/2 TspCumin
1/2 cupDill leaves ( nicely chopped )
3/4 TspBlack pepper powder
1 TspGreen chilly nicely chopped ( optional )
1 TspSalt ( adjust )
Oil to make roti on tawa [ dosai kal ]

Method :
Take all the ingredients in a wide mouthed vessel and mix well.
Add quarter cup of water and mix well.
Add some more water if needed and make a dough slightly flexible.
The dough shoudn't be as tight as chappathy dough.
Take a tawa ( dosai kal ) smear oil.
Keep a big ball of dough over tawa and slowly spread using hand.
Now heat the tawa on a medium flame.
Flip and cook other side.
The roti should be white in color and with some gold spots here and there.
Transfer on to a plate.
Enjoy with kadalai chutny, coconut chutny, tomato sauce and also with tomato chutny.

Note : Grated carrot and nicely chopped coriander leaves can also be used along with dill.

Chappathy/Roti Varieties

#Chappathy [ #Roti ] : Generally chappathy dough is prepared from whole wheat flour. To increase its nutritional value other flours like soya flour, buckwheat flour, amaranth flour etc., are added. The chappathy can also be made more nutritious by adding green leafy vegetables.

Cooked-Rice-Coriander-Pancake

#CookeRiceCorianderPancake : I usually cook rice just enough for me and my husband for lunch. The other day he couldn't come back from work for lunch. So some left over cooked rice was there. He doesn't like to take rice for dinner. When I was scratching my head what to do with the left over rice, my dear daughter gave me this idea. I immediately swung into action and prepared spicy healthy green pancake.
Now I would like to present before you how I made those pancakes.

Cooked rice coriander pancake

Ingredients:
1 cupCooked Rice
1/4 cupRice flour
1/4 cupAmaranth flour [ optional ]
1/4 cupMint leaves
1/2 cupCoriander leaves
8 to 10Spinach leaves
3 or 4Green chilly [ adjust ]
1 TspCumin seeds
1 TspSalt

Oil to spread dough on a plastic sheet and to make pancakes.

Method :
Wash all the leaves and take in a mixie jar.
To that add green chilly, cumin, salt and grind coarsely.
Now add rice and grind into a smooth paste.
Transfer into a wide mouthed vessel.
Now add rice flour and amaranth flour.
Adjust salt.
Knead into a slightly tight dough.
If the dough seems to be soggy, then add some more rice flour.
Divide equally into a big palm sized balls.


Heat a tawa on a stove over a medium flame.

Take a banana leaf or a clean & dry plastic sheet.
Apply oil over it.
Spread the dough into a pancake by hand after greasing fingers with oil.


Transfer the pancake gently over the oiled tawa.
Sprinkle some oil over the pancake.
Cook well on both sides.

Transfer on to a serving plate.
Repeat the process to make other pancakes also.
Relish with any chutney or with tomato sauce.

Palak Chappathy

#PalakChappathy : #Palak is one of the tastiest green leafy vegetables and goes well with any type of preparation. 

I generally used to prepare Keerai masiyal and  koottu [ lentil ] with this leafy vegetable. Here I prepared chappathy using this leafy vegetable and here comes the method.

Palak Chappathy [ Palak Roti ]


Ingredients :
2 cups                                 Multi grain wheat flour
1/2 Tsp                               Cumin Powder
1/4 Tsp                               Shajeera
1/4 Tsp                               Ajwain [ omam ]
1 pinch                               Asafoetida
3/4 Tsp                              Salt
1 cup                                 Palak, chop nicely
1 Tsp                                 Oil [ I used gingelly oil ]
Enough oil to make chappathy.

Method :
Wash the palak thoroughly in water two or three times.
Keep on cutting board or colander to drain water.

Palak

Take all other ingredients in a wide mouthed vessel.
Add chopped palak and enough water.
Knead into a tight dough.
Add a tsp of oil and knead until dough becomes soft.

Keep a tawa on a stove over medium flame.
Make roti using a rolling pin over a platform.
Put the rolled roti over the hot tawa.


Add few drops of oil and spread evenly over the roti with dosai ladle.
Flip the other side and spread a few drops of oil on this side also.

Transfer into a casserole after cooking well on both the sides.
Enjoy with lentil or with any side dish of your choice.

Red Greens Chappathy

I generally used to prepare mashed red greens, 

lentils with red greens and rarely stir fry.
This time I made chappathy with red greens - red amaranth leaves.
Let us see the method of preparation.

Ingredients :


Red Mulai keerai [ Red Amaranth or Red greens ]

2 cups                                 Multi grain wheat flour
1/2 Tsp                               Cumin Powder
1/4 Tsp                               Cinnamon Powder
1 pinch                               Asafoetida
3/4 Tsp                              Salt
1 cup                                 Red Greens [ Red amaranth leaves ]
1                                       Onion, nicely chopped
1 Tsp                                Oil
Oil to make chappathy.

Method :
Wash the green throughly in water for two or three times.
Keep on cutting board or colander to drain water.

Take all other ingredients in a wide mouthed vessel.
Now grind the leaves in a mixie / blender without adding water.
Transfer the ground greens paste into the vessel with other ingredients.
Knead into a tight dough.


Keep a tawa on a stove over medium flame.
Make roti using a rolling pin over a platform.
Put the rolled roti over the hot tawa.
Add few drops of oil and spread evenly over the roti with dosai ladle.
Flip the other side and spread a few drops of oil on this side also.

Buckwheat Spinach Roti

#BuckwheatSpinachRoti  [ #BuckwheatRotiwithGreens ] : #Buckwheat is an edible seed. Here let me present a recipe to prepare roti using buckwheat and water chestnut flour [ singhara ]. Here is the recipe.

Paapparai Pasalai Roti [ Buckwheat Spinach Roti ]


Ingredients :
1/2 Cup                                Buckwheat flour
3/4 Cup                                Whole wheat flour
1/2 Cup                                 Water chestnut flour [ singhara ]+
1/2 Cup                                Spinach nicely chopped
1/2 Tsp                                Omam*
1/2 Tsp                                 Salt
1 Tsp                                    Green chilly paste
1/2 cup                                 Water

+If Water chestnut flour is not available then Amaranth flour can be used.

*Trachyspermum ammi, commonly known as ajowan or ajwain, bishop's weed, ajowan caraway, carom seeds or thymol seeds, or vaamu in Telugu or Omam in Thamizh is a plant of India, Pakistan, Iran, Egypt where these seeds are used as spice.

Method :
Combine all the given ingredients in a wide mouthed vessel.
Knead into a tight dough.

Keep a tawa on a stove over medium flame.
Spread roti using a rolling pin over a platform.

Transfer the rolled roti over the hot tawa.
Add few drops of oil and spread over the roti with dosai ladle.
Flip the side and spread a few drops of oil on this side also.

Transfer into a casserole after cooking well on both the sides.
Enjoy with Cauliflower kuruma or any side dish of your choice.
