Chappathy/Roti Varieties

#Chappathy [ #Roti ] : Generally chappathy dough is prepared from whole wheat flour. To increase its nutritional value other flours like soya flour, buckwheat flour, amaranth flour etc., are added. The chappathy can also be made more nutritious by adding green leafy vegetables.

Venthayakeerai-Chappathy

#VenthayakeeraiChappathy or #MethyChappathy or #FenugreekLeafChappathy : Generally #venthayakeerai is used in the preparation of koottu [ lentil ] only. We all know green leafy vegetables are rich source of fiber, vitamins and minerals. So in order to consume #fenugreekleaves in a different way I have used it in the preparation of chappathy. Here comes the method of preparation.

Venthayakeerai Chappathy [ Fenugreek leaves chappathy ]

Ingredients :
2 cups                                 Multi grain wheat flour or Whole wheat flour
1/8 cup                               Amaranth seeds cooked
1/4 Tsp                               Shajeera or Cumin seeds
1/4 Tsp                               Ajwain [ omam ]
1 pinch                               Asafoetida
3/4 Tsp                              Salt
1 cup                                 Venthaya keerai [ Fenugreek leaf ], chop nicely
1 Tsp                                 Oil [ I used gingelly oil ]

Enough oil to make chappathy.

Method :
Wash the venthaya keerai thoroughly in water two or three times.
Keep on a cutting board or colander to drain water.

Take all other ingredients in a wide mouthed vessel.
Add chopped venthaya keerai and enough water.
Knead into a tight dough.
Add a tsp of oil and knead until dough becomes soft.

Keep a tawa on a stove over medium flame.
Make roti using a rolling pin over a platform.
Put the rolled roti over the hot tawa.


Add few drops of oil and spread evenly over the roti with dosai ladle.
Flip the other side and spread a few drops of oil on this side also.

Transfer into a casserole after cooking well on both the sides.
Enjoy with lentil or with any side dish of your choice.

Dry cuury can be spread over the chappathy.
Tightly roll them and enjoy. These rolls can be packed for lunch.
Easy to carry and more over tasty and healthy too.

Palak Chappathy

#PalakChappathy : #Palak is one of the tastiest green leafy vegetables and goes well with any type of preparation. 

I generally used to prepare Keerai masiyal and  koottu [ lentil ] with this leafy vegetable. Here I prepared chappathy using this leafy vegetable and here comes the method.

Palak Chappathy [ Palak Roti ]


Ingredients :
2 cups                                 Multi grain wheat flour
1/2 Tsp                               Cumin Powder
1/4 Tsp                               Shajeera
1/4 Tsp                               Ajwain [ omam ]
1 pinch                               Asafoetida
3/4 Tsp                              Salt
1 cup                                 Palak, chop nicely
1 Tsp                                 Oil [ I used gingelly oil ]
Enough oil to make chappathy.

Method :
Wash the palak thoroughly in water two or three times.
Keep on cutting board or colander to drain water.

Palak

Take all other ingredients in a wide mouthed vessel.
Add chopped palak and enough water.
Knead into a tight dough.
Add a tsp of oil and knead until dough becomes soft.

Keep a tawa on a stove over medium flame.
Make roti using a rolling pin over a platform.
Put the rolled roti over the hot tawa.


Add few drops of oil and spread evenly over the roti with dosai ladle.
Flip the other side and spread a few drops of oil on this side also.

Red Greens Chappathy

I generally used to prepare mashed red greens

lentils with red greens and rarely stir fry.
This time I made chappathy with red greens - red amaranth leaves.
Let us see the method of preparation.

Ingredients :


Red Mulai keerai [ Red Amaranth or Red greens ]

2 cups                                 Multi grain wheat flour
1/2 Tsp                               Cumin Powder
1/4 Tsp                               Cinnamon Powder
1 pinch                               Asafoetida
3/4 Tsp                              Salt
1 cup                                 Red Greens [ Red amaranth leaves ]
1                                       Onion, nicely chopped
1 Tsp                                Oil
Oil to make chappathy.

Method :
Wash the green throughly in water for two or three times.
Keep on cutting board or colander to drain water.

Take all other ingredients in a wide mouthed vessel.
Now grind the leaves in a mixie / blender without adding water.
Transfer the ground greens paste into the vessel with other ingredients.
Knead into a tight dough.


Keep a tawa on a stove over medium flame.
Make roti using a rolling pin over a platform.
Put the rolled roti over the hot tawa.
Add few drops of oil and spread evenly over the roti with dosai ladle.
Flip the other side and spread a few drops of oil on this side also.

Buckwheat Spinach Roti

#BuckwheatSpinachRoti  [ #BuckwheatRotiwithGreens ] : #Buckwheat is an edible seed. Here let me present a recipe to prepare roti using buckwheat and water chestnut flour [ singhara ]. Here is the recipe.

Paapparai Pasalai Roti [ Buckwheat Spinach Roti ]


Ingredients :
1/2 Cup                                Buckwheat flour
3/4 Cup                                Whole wheat flour
1/2 Cup                                 Water chestnut flour [ singhara ]+
1/2 Cup                                Spinach nicely chopped
1/2 Tsp                                Omam*
1/2 Tsp                                 Salt
1 Tsp                                    Green chilly paste
1/2 cup                                 Water

+If Water chestnut flour is not available then Amaranth flour can be used.

*Trachyspermum ammi, commonly known as ajowan or ajwain, bishop's weed, ajowan caraway, carom seeds or thymol seeds, or vaamu in Telugu or Omam in Thamizh is a plant of India, Pakistan, Iran, Egypt where these seeds are used as spice.

Method :
Combine all the given ingredients in a wide mouthed vessel.
Knead into a tight dough.

Keep a tawa on a stove over medium flame.
Spread roti using a rolling pin over a platform.

Transfer the rolled roti over the hot tawa.
Add few drops of oil and spread over the roti with dosai ladle.
Flip the side and spread a few drops of oil on this side also.

Transfer into a casserole after cooking well on both the sides.
Enjoy with Cauliflower kuruma or any side dish of your choice.
