Kuthiraivaali Sundal

Kuthiraivaali is one of the millets whose fibre content is more than rice and wheat.

#Sundal is a traditional dish prepared for breakfast or dinner with dry roasted rice and green gram.
Roasting the grains gives a nice flavour and taste to the dish.
Especially the roasted green gram gives a distinct taste to this dish.
Now let me present the method of preparation of #Sundal with Barnyard millet.
Given ingredients are enough to prepare sundal for 3 people.
Preparation Time      : 15 mins
Cooking Time           : 15 mins

Kuthiraivaali Sundal [ Barnyard millet Sundal ]

Ingredients :
3/4 cup                                       Kuthiraivaali [ barnyard millet ]
1/4 cup                                 Thuvar dal
1 big size                                  Onion, chop nicely
3                                              Green chilly, split lengthwise
10 - 15                                     Curry leaves
1/2 inch piece                            Ginger, chop nicely & crush lightly
3/4 Tsp                                     Salt [ adjust ]
2 cups                                      Water

To Temper :
1 Tsp                                      Mustard
3 Tsp                                      Gram dal [ channa dal ]
1/4 Tsp                                   Asafoetida
3 Tsp                                      Oil, gingelly oil [till/sesame oil ] preferred

Method :
Heat a heavy bottomed kadai on a stove over slow flame.
Add kuthiraivaali.
Dry roast kuthiraivaali till its color changes to bright white.
Then transfer into a vessel. Keep aside.

Dry roast green gram dhal till its color changes to golden brown.

Nicely chop onion and split green chilly lengthwise.
Add oil in the same kadai used for roasting rice and dal and heat on medium flame.
Splutter mustard seeds.
Then add gram dhal and asafoetida ( hing ).
When dhal color turns golden brown add curry leaves.
Then add split green chilly.
Saute for a few seconds and then add onion.
Saute till onion turns pale pink color.

Add salt and 2 cups of water.
Keep burner at high and bring it to boil.

Wash roasted kuthiraivaali and dal in water.
When water starts to boil keep burner at SIM.
Add washed kuthiraivaali and dal.
Mix well and close with a lid.

Cook for 10 minutes.
Open the lid and stir well with a ladle once in 2 minutes.
Turn off the stove once kuthiraivaali and dhal become soft and keep it closed for another 5 minutes.

Now Kuthiraivaali sundal is ready.

Serve hot with Karisalankanni thuvaiyal [ Bhringaraj Chutney ] or coconut chutney.
