Here in Raipur where I am living now, a welcome drink used to be served along with spiced buttermilk in all dinners and also for lunch during Summer season. First I thought it is lemon juice mixed with some ready made concentrate since it was colorless. Then I came to know that the drink is called Aam Panna, a sweet and sour drink prepared from raw mango.
Here local people used to say that raw mango cools down body temperature. But the mango fruit only heats up the body.
I learned the recipe from some of them living nearby. Some told me that the raw mango should be cooked on fire until the skin get charred. Then the cooked pulp is used to make aam panna after discarding the skin.
Some of them told that mango is pressure cooked with skin and then the pulp is utilized to prepare the drink.
I made the drink this way.
[ Two days back I made Maangai Pachadi and today only got time to make this drink. But the ripening of mango has already begun. So the mango I used is half ripened but sour in taste. Use only raw mango to get the real taste ]
Ingredients :
To prepare sweetened Mango pulp :
2 cups Raw mango, shredded
1/4 cup Sugar [ adjust according to mango taste ]
To make a cup of drink :
1/4 cup Sweetened Mango pulp
1/4 Tsp Cumin powder
1/4 Tsp Black salt [ Rock salt ]
2 or 3 Mint leaves
Method :
Take mango pieces and sugar in a pressure cooker.
Add 1/4 cup of water. Mix well.
Pressure cook for 2 or 3 whistle.
Turn off the stove and open immediately.
Mash with a ladle or blend in a mixie after cooling the pulp.
Now to prepare a cup of aam panna :
Take 1/4 cup of this sweetened pulp.
Add rock salt, cumin powder, 3/4 cup of water and mix well.
Top the drink either with a pinch of cumin powder or with mint leaves.
Enjoy this tangy and sweety yummy mouth watering drink!!
Really a tasty drink to beat the heat!!
The remaining sweetened pulp can be stored in fridge after bringing it down to room temperature for another two days. Store in a glass bottle or in a clay bowl.
Another method of preparing sweetened mango pulp :
Take washed mango [ unripe ] in a vessel and add water.
Pressure cook for 3 to 4 whistles.
Then remove the skin and squeeze out the cooked pulp using hands / knife.
Grind into a smooth paste.
Take cooked mango pulp in a pressure cooker.
Add sugar and 1/4 cup of water and mix well.
Pressure cook for 1 whistle keeping the flame at HIGH.
Then transfer into a glass/porcelain bowl.
Note : Adjust sugar according to the taste of mango used.
