#AvalMixer : #Mixer is a famous savory done in India in many ways and in different combinations. The seasoning of mixer also varies from region to region. Generally omapudi, karabhoondi, maida biscuits are prepared separately and then added together with fried pea nuts, fried gram, curry leaves,fried cashew nuts, etc.,... All these items are mixed together with seasonings like red chilly powder, asafoetida powder, salt & sugar. Some people also use chat masala powder, amchur powder, etc.,.. for seasoning the mixer.
The above things in a mixer can be replaced [ or can be included ] by #avalpori [ puffed beaten rice or puffed rice flakes ], pori [ puffed rice ], fried horse gram, corn flakes etc.,... N number of different combinations of mixer can be prepared with varied tastes & flavour.
Here I prepared a mixer from aval pori and omapodi. Aval pori [ puffed aval or chivda ] can be bought from puffed rice makers.
Now let us see the preparation.

Aval mixer

Ingredients :
2 - 3 cupsPuffed rice flakes [ Aval Pori ]
6 TspOil
1/4 cupGround nut [ peanut ]
1/4 cupFried gram
4Red chilly, break into pieces
1/2 TspMustard seeds
15 - 20Curry leaves
1 TspSalt [ adjust ]
1/4 TspTurmeric powder
1/2 - 3/4 TspAsafoetida [ adjust ]
1/2 TspRed chilly powder [ adjust ]
2 cupOmapodi crushed

Method :
Heat a big kadai with oil on a stove over slow flame.
Add mustard seeds after oil becomes hot and wait till it splutters.
Then add asafoetida powder, broken pieces of red chilly, ground nut and fry until peanut crackles.
Now add fried grams and fry for a minute or until fried gram becomes golden color.
At this point add curry leaves and swiftly stir for few seconds.
Then add salt,turmeric powder and red chilly powder and turn off the stove.
Now add aval pori and stir well so that the fried ingredients completely mix with the aval pori.
Finally add omapodi and adjust salt and red chilly powder.
Mix well.
Tasty spicy avalmixer is ready.
Enjoy with a hot coffee or tea.

Karabhoondi, fried corn flakes can also be added to make aval mixer.

#KaramaniMasalaCurry [#CowpeaMasalaCurry ] : I recently prepared a north Indian style curry from #cowpea [ #karamani ]. Generally north Indian curry contains lots of onion and tomatoes and finally curd or thick cream is added to neutralize the taste. I have replaced curd or cream with coconut masala to suit my taste buds.
Now let me present the method of preparing karamani masala curry.

karamani masala curry

Ingredients :
Ingredients to grind :
3 TspCoconut scrapping
3 or 4Cashew nuts
1/4 TspKhus khus
1 TspCumin seeds
Ingredients for curry :
1/2 cupKaramani [ cow pea ] soaked for 6 hours
3 or 4Tomato, take puree
2Onion, chop finely
10 - 12Garlic cloves chopped nicely
1 inch longGinger, chop finely
1/4 TspTurmeric powder
1 TspRed chilly powder [ adjust ]
1 TspCurry powder [ adjust ]
1 Tspsalt [ adjust ]
3 TspOil
10Curry leaves
3 TspCoriander leaves chopped

Method :
Pressure cook soaked karamani [ cow pea ] for 2 whistles.
Release the steam immediately and keep aside.

Grind all the things given under ' ingredients to grind ' in a blender adding enough water.
Grind into a smooth paste.
Transfer into a bowl and set aside.

Heat a kadai with oil on a stove over a medium flame.
Add chopped ginger and garlic after oil becomes hot.
Saute for few seconds and then add chopped onion.
Add 1/8 Tsp of salt and saute onion till it turns golden brown color.
After onion becomes golden brown add tomato puree and mix well.
Allow to boil until the raw smell goes off.
Now add turmeric powder, red chilly powder and mix well.
Then add cooked karamani and its stock.
If necessary add some water also.
Mix well and let it simmer for 3 minutes.
Add salt and curry powder and simmer for another 5 minutes.
Add half of curry leaves and coriander leaves to infuse the aroma.

Finally add coconut masala and allow to cook on slow flame for 3 minutes or until curry attains required consistency.
Now tasty spicy karamani masala curry is ready.

Turn off the stove and transfer into a serving bowl.
Garnish with curry leaves and coriander leaves.
An excellent side dish for appam, dosai, chappathy and poori.
It goes well with white rice also.

#VegetableStirFry is known as #Poriyal or #thuvatal in Tamil.
The vegetables are chopped nicely and cooked till tender with salt & #Sambarpowder or Red chilly powder. Then stir fried on high flame after tempering and finally coconut scrapings are added.
Then stirred well to mix coconut well with vegetable.
These stir fried vegetables go well with sambar rice and rasam rice.

Poriyal or thuvatal needs very little oil to prepare.
The cooked vegetables are not being roasted on the stove for a long time.
By this way the nutrients of the vegetables stay intact.
