#CauliflowerPoriyal : #Cauliflower is rich in Vitamin C and Vitamin B 6. It is also a good source of minerals like Potassium, Calcium and Magnesium. 100 gm of Cauliflower gives nearly 80% of Vitamin C to your body which is the recommended daily requirement of Vitamin C for you.
But people prefer fried Cauliflower in their menu. I feel frying destroys important nutrients.
I have already published many recipes on cauliflower with masalas.
Here I would like to present a simple stir fry which is very very easy to prepare and very tasty too!
It can be done very quickly if it is farm fresh.
Ingredients :
1 cup Cauliflower pieces
1 medium size Onion, chopped
2 Green chilly, slit lengthwise
3 Tsp Coconut scrapings
1/2 tsp Salt [ adjust ]
Coriander leaves to decorate
To Temper ;
1/2 Tsp Mustard
1 Tsp Black gram split
1 Tsp Oil
Method :
Heat a kadai over a slow flame with oil.
Splutter mustard and then add black gram.
Roast till black gram becomes golden color.
Then add green chilly and then onion.
Saute until onion turns pale pink color.
Now add washed and rinsed cauliflower pieces.
Stir well adding enough salt.
Close with a lid till cauliflower becomes soft.
It would take 2 to 3 minutes to cook soft.
Once it is done keep the flame at HIGH and add coconut scrapings.
Stir for few second and turn off the stove.
Transfer into a serving bowl.
Garnish with coriander leaves.
A great side dish for sambar and rasam rice.
