#RadishLentilStirFry : #Radish is a tap root vegetable just like carrot. Its a watery vegetable and widely used in the preparation of salads. It is slightly hot and sweet in taste with a very distinct flavor. It is one of the best vegetables suitable for making tasty sambar.
If stir fry is done with this vegetable, it will become soggy after some time since its a watery vegetable.So we are going to add lentils which get soaked in the water that oozes out of grated radish.
Here comes the recipe.
Preparation time : 30 minutes
Cooking time : 10 minutes
Ingredients:
250 gmas Radish
1 small size Onion, chop nicely
2 Tsp Coriander leaves chopped finely
2 stalks Spring Onion, chop nicely [ optional ]
3 Tsp Capsicum finely chopped [ optional ]
5 - 6 Curry leaves
1/4 cup Green gran split
2 Tsp Gram dhal
3/4 Tsp Salt[ adjust ]
2 pinches Turmeric powder [ optional ]
3 Tsp Coconut scrap
To Temper :
1 Tsp Mustard seeds
1 or 2 Red chilly, break into pieces
2 Tsp Black gram split [ urad dhal ]
1 Tsp Oil
Method :
Remove skin of Radish. Grate using a carrot grater.
Transfer into a wide mouthed vessel/basin.
Wash split green gram [ moong dhal ] and gram dhal in a small bowl and drain water completely.
Add washed lentils and salt to the grated radish.
Mix well and keep aside for half an hour.
After half an hour the lentils would have got soaked well with water that oozes out of radish.
Now heat a kadai on a stove with oil over a medium flame.
Crackle mustard seeds and then add red chilly pieces and split black gram.
Roast until black gram turns golden brown.
Add onion, curry leaves, 3/4th of spring onion and 3/4th of coriander.
Saute until onion turns slightly pink.
Now squeeze out excess water from radish lentil mix and add into the kadai.
Adjust salt and stir well keeping the flame at high.
Keep it in mind that we have already added salt in the radish lentil mixture.
After a few seconds reduce the flame and close the kadai with a lid.
Grated radish would take very less time to cook.
Open the lid when its done add coconut scrap.
Stir well by keeping the flame at high.
Stir continuously until water evaporates.
Turn off the stove and transfer into a serving bowl.
Tasty radish stir fry with lentil, a good side dish for sambar and rasam rice.
