Karamani-Curry

#KaramaniCurry  #CowpeaCurry : #Karamani [ #Cowpea ] belongs to #Legume family and available in 2 or 3 different color. It is good source of protein, vitamins and dietary fibers just like any other legume. Kuzhambu, sundal [ stir fry ] can be prepared from Karamani. I tried a curry using karamani as side dish for poori recently. The side dish was very tasty and a healthy alternative to potato masala for poori.
Here let me present a recipe to prepare a curry which goes well with poori and chappathi.

Karamani curry


Ingredients :
1/4 cupKaramani soaked for 5 to 6 hours
1onion chopped nicely
2 or 3green chilly chopped
4 medium sizeTomato chopped nicely
2 TbspCarrot chopped nicely
small pieceginger chopped nicely and crushed
10 to 15curry leaves
2 Tspcoriander leaves chopped
1/2 TspRed chilly powder [ adjust ]
1/2 TspCumin powder
1/4 TspTurmeric powder
1 TspMustard seeds
1/2 TspCumin
1 TspBlack gram split
2 TspOil
1 TspSalt [ adjust ]

Method :
Take soaked karamani and 1/4 Tsp salt in a pressure cooker.
Add 1/2 cup of water and pressure cook for 1 whistle.
Open the cooker only after it ran out of steam.
Transfer the cooked karamani along with the water into a bowl.
Keep aside.

Heat a kadai with oil on a stove over a medium flame.
Crackle mustard and cumin and then add black gram split.
Add red chilly powder, green chilly and curry leaves only after black gram becomes golden color.
Now add onion, turmeric powder & cumin powder and saute until it becomes transparent.
Then add crushed ginger and saute well.
After that add carrot and saute for half a minute.
Now add chopped tomato and saute well until its done.

Take 2 Tsp of cooked karamani and mash well.
Now add mashed karamani along with cooked karamani and the water in which it was cooked also.
Add enough salt and mix well.
Bring it to boil and then allow to simmer for 8 to 10 minutes after reducing the flame to SIM.
Finally adjust salt and add chopped coriander leaves.
Turn off the stove and pour into a serving bowl.

A very good side dish for poori, chappathi, dosai and appam.
Try it out once and I'm sure it will definitely earn a place in your menu!!
