Aval-Mixer

#AvalMixer : #Mixer is a famous savory done in India in many ways and in different combinations. The seasoning of mixer also varies from region to region. Generally omapudi, karabhoondi, maida biscuits are prepared separately and then added together with fried pea nuts, fried gram, curry leaves,fried cashew nuts, etc.,... All these items are mixed together with seasonings like red chilly powder, asafoetida powder, salt & sugar. Some people also use chat masala powder, amchur powder, etc.,.. for seasoning the mixer.
The above things in a mixer can be replaced [ or can be included ] by #avalpori [ puffed beaten rice or puffed rice flakes ], pori [ puffed rice ], fried horse gram, corn flakes etc.,... N number of different combinations of mixer can be prepared with varied tastes & flavour.
Here I prepared a mixer from aval pori and omapodi. Aval pori [ puffed aval or chivda ] can be bought from puffed rice makers.
Now let us see the preparation.

Aval mixer

Ingredients :
2 - 3 cupsPuffed rice flakes [ Aval Pori ]
6 TspOil
1/4 cupGround nut [ peanut ]
1/4 cupFried gram
4Red chilly, break into pieces
1/2 TspMustard seeds
15 - 20Curry leaves
1 TspSalt [ adjust ]
1/4 TspTurmeric powder
1/2 - 3/4 TspAsafoetida [ adjust ]
1/2 TspRed chilly powder [ adjust ]
2 cupOmapodi crushed

Method :

Heat a big kadai with oil on a stove over slow flame.
Add mustard seeds after oil becomes hot and wait till it splutters.
Then add asafoetida powder, broken pieces of red chilly, ground nut and fry until peanut crackles.
Now add fried grams and fry for a minute or until fried gram becomes golden color.
At this point add curry leaves and swiftly stir for few seconds.
Then add salt,turmeric powder and red chilly powder and turn off the stove.
Now add aval pori and stir well so that the fried ingredients completely mix with the aval pori.
Finally add omapodi and adjust salt and red chilly powder.
Mix well.
Tasty spicy avalmixer is ready.
Enjoy with a hot coffee or tea.

Notes:
Karabhoondi, fried corn flakes can also be added to make aval mixer.

Kara-Aval-Pori

#KaraAvalPori #SpicyPuffedRiceFlakes : Traditionally Puffed rice is made by heating the rice in a sand filled oven. The very high temperature makes the rice to puff up. This puffed rice is called pori in Tamil and muri or mur mura in Hindi.
When the rice flakes [ #Aval ] is puffed up it is called puffed rice flakes.
#PuffedRiceflakes is known as #AvalPori in Tamil. It is called #Chivda in Hindi.
Here let me present a simple recipe to prepare a spicy evening snack using AvalPori.


Ingredients :
4 - 5 cupsPuffed rice [ Pori ]
6 TspOil
1/2 TspMustard seeds
1/4 cupGround nut [ peanut ]
1/4 cupFried gram
4Red chilly, break into pieces
4Green chilly
1 TspCumin seeds
8 clovesGarlic
15 - 20Curry leaves
1 TspSalt [ adjust ]
1/4 TspTurmeric powder
1/4 TspAsafoetida
1/2 TspRed chilly powder [ adjust ]

Method :
Smash four cloves of garlic and keep aside.
Grind coarsely 4 cloves of garlic, green chilly, cumin seeds and salt.
Keep aside.
Heat a big kadai with oil on a stove over slow flame.
Add mustard seeds after oil becomes hot and wait till it splutters.
Then add asafoetida powder, broken pieces of red chilly, ground nut and fry until peanut crackles.
Now add fried grams, smashed garlic cloves, curry leaves and coarsely ground paste and fry for a minute or until fried gram becomes golden color.
At this point add curry leaves and swiftly stir for few seconds.
Then add salt, turmeric powder and red chilly powder and turn off the stove.

Now add aval pori and stir well so that the fried ingredients completely mix with the aval pori.
Spicy and crunchy kara aval pori is ready.
Transfer into an airtight container.
It can be stored for a week to 10 days.
It is a very good snack for evening tea or coffee.

Savory Mixer

#Mixer - #SavoryMixer : I have made mixer at home long back for a diwali. After that I Haven't done at all. I like its asafoetida aroma and crispy fried curry leaves flavor. The mixer available here is seasoned with chat masala. But I wanted to have our mixer with traditional flavor.

So I decided to make it at home and made it. I prepared omapodi and karaboondhi using 1/2 cup of gram flour each. Then fried corn fryums available in the market. Only thing missing was fried gram. But compensated it with lot of peanuts. Seasoned all with red chilly powder, fried curry leaves, asafoetida powder and salt. Ah!.. tasty crunchy mm.. mixer ready. I got nearly three cups of mixer.
Here comes the recipe.

Savory Mixer


Ingredients :

For Omapodi :
1/2 cup                     Gram flour [ Besan ]
1 Tbsp                       Rice flour
1 Tsp                         Omam [ optional ]
1/4 Tsp                     Salt
2 pinch                     Asafoetida
1/8 Tsp                     Red chilly powder
1 pinch                     Turmeric powder

For Karaboondhi :
1/2 cup                     Gram flour [ Besan ]
2 Tbsp                       Rice flour
1/4 Tsp                     Salt
1 pinch                     Turmeric powder
1 pinch                     Asafoetida powder

Other Ingredients :
1/2 cup                    Corn fryums [ if available ]
1/4 cup                    Fried gram
1/4 cup                    Pea nuts [ Ground nuts ]
1/4 cup                    Thick Rice flakes - ketti aval [ optional ]
15 - 20                    Curry leaves

For seasoning :
1 Tsp                      Powdered Sugar
1/4 Tsp                   Asafoetida powder
1 Tsp                      Salt [adjust]
1/2 Tsp                   Red chilly powder[adjust]

2 cups of Oil to fry

Method :
Heat oil in a kadai on a stove over a medium flame.
Prepare Omapodi following the method explained at Omapodi post. Keep aside.

Method of preparation of Karaboondhi :
Prepare a watery batter just like dosai batter with the given ingredients.
Hold a ladle with holes on your left hand just above the kadai with hot oil.
Take a ladle full of batter with your right hand and pour over that ladle with holes.
Just shake the ladle with holes or apply pressure over the batter with the other ladle.
Always make boondhi one ladle at a time.
Stir the frying boondhi with a ladle and take out when it turns golden color.

Transfer onto a plate layered with tissue paper.

In the same way fry boondhi in batches. Keep aside.

In the same oil fry peanuts, fried gram [ if taken ], thick rice flake [ if taken ] and finally curry leaves in batches separately one by one.

To season mixer :
Take a wide mouthed vessel or a basin.
Crumble omapodi and put into the vessel.
Then add all other fried items.
Add powdered sugar, asafoetida powder, red chilly powder and salt.
Crumble Omapodi and add boondhi and fried corn fryums Add salt, red chilly powder, asafoetida powder and powdered sugar

Mix well by shaking the vessel. Adjust salt and chilly powder according to your taste.
mm... ah! crispy crunchy flavorful mixer ready.
