Vazhaithandu-Carrot-Soup

#VazhaithanduCarrotSoup : #BananaStem is called #Vazhaithandu in Tamil. It is rich in fiber and diuretic in nature. It is rich in potassium and Vitamin B6. It is very low in cholestrol so those who are on diet can consume lot. It is advisable to include vazhaithandu in our daily diet in some form.
I have prepared a tasty soup using vazhaithandu along with carrot.



Ingredients :
1/4 cupVazhaithandu nicely chopped
1/4 cupCarrot grated
3 TspOnion nicely chopped
1 TspGarlic nicely chopped
1 TbspGreen peas boiled [ optional ]
1/2 TspGhee/Butter
1 TbspSoft oats
1/4 cupThick coconut milk [ optional ]
Few stalks of spring onion.

Method :
Heat a kadai on a stove over slow flame.
Add ghee and crackle cumin seeds.
Then add chopped garlic followed by chopped onion.
Saute for a minute and then add grated carrot, boiled green peas and nicely chopped vazhaithandu.
Saute for half a minute and add 1 cup of water.
Simmer till carrot and vazhaithandu becomes tender.
After that add oats and allow to simmer till the liquid turns to porridge consistency.
Finally add coconut milk, salt and chopped spring onion.
Allow to simmer for a minute and then turn off the stove.
Serve hot topping with black pepper powder.


Note :
The quantity of vazhaithandu can be increased according to availability and taste.
A split green chilly can be added if you like it to be spicy.

Carrot-Boli

#CarrotBoli [ #CarrotPoli ] :  #Boli or #Poli is usually a sweet stuffed pancake. Generally the sweet stuffing is made of bengal gram or coconut with jaggery. The sweet stuffing is called pooranam in Tamil. For a change I recently prepared boli with Carrot Halwa.  

Knead Dough for Boli 

or whole wheat dough for boli following the method given in the link. The dough should be made 4 to 5 hours before start making boli.
Keep ready a clean cellophane [ plastic ] sheet or plantain leaf to spread the boli.
Now over to the method of preparing carrot boli

Ingredients :
Carrot Halwa


Dough for Boli 

or whole wheat dough for boli
Oil and ghee to spread boli over the sheet and fry over tawa respectively.

Method : 
Take a plastic sheet or a small piece of plantain leaf.
Apply oil liberally  on the sheet.
Take a ball of boli dough and spread on the sheet with your hands to make a small round.
Keep a ball of stuffing at the centre and close it with dough.
Now oil your hand and spread evenly on the sheet.

Heat a tawa on a stove over  medium flame.
When its hot add oil on the tawa.
Transfer the boli onto the tawa.
Add oil/ghee over and around the boli.
Cook well till both sides turn golden color.

Transfer on to a plate.
Continue doing the same way to prepare boli one by one.

Serve hot or cold. No need of any side dish.

Carrot-Thinai-Payasam

#CarrotThinaiPayasam  #CarrotFoxtailMilletPayasam : #CarrotPayasam is generally prepared with milk and corn flour is added to get the porridge consistency. Here I have used #thinai instead of corn flour. Thinai is known as #FoxtailMillet in English.
Thinai [ FoxtailMillet ] is rich in dietary fibers, vitamins and minerals. Especially it is one of the richest sources of iron and copper.
Here I have taken the whole grain of thinai. It is soaked in water and then thinai milk is extracted by grinding soaked thinai in a blender adding water.
Now to the recipe.
Approximately 1 1/2 to 2 cups of Payasam can be prepared.

Carrot Thinai Payasam [ Carrot Foxtail Millet Payasam ]

Ingredients :
1/8 cupThinai [ foxtail millet ]
1 cupMilk
1/8 cupCarrot grated
1/8 cupSugar [ adjust ]
1 pinchSalt
2 or 3Almonds, grate finely
1/4 TspCardamom powder

Method :
Wash and then soak thinai grains in a bowl for 2 hours.
After 2 hours grind with 1/4 cup of water using a blender.
Then strain through a tea filter into another bowl.
Put back the ground grain that settled over the filter again into blender jar.
Add some water and grind and then strain into the same bowl.
Again repeat the process one more time.
Finally discard the sediments.
Keep aside the thinai milk extract.

In another bowl boil milk and keep aside.
Now take grated carrot in a vessel and heat over a slow flame.
Keep stirring and saute until carrot becomes soft.
Then add sugar and keep stirring.
The sugar melts down and becomes watery.
Now add boiled milk and mix well.
Allow to simmer for 5 minutes.
Finally add thinai milk extract stirring continuously with a spoon.
Keep stirring until the liquid becomes shiny and attains porridge consistency.
Finally add cardamom powder and mix well.
Turn off the stove.
Transfer into serving bowl topping with grated almond.
Serve hot with a savory like vadai or bajji.

Carrot-Salad-with-Green-gram-Sprouts

#CarrotSaladwithGreengramSprouts : During winter carrots are available in plenty and they are very tasty too. Carrot is the best suited vegetable for making fresh salads. Here it is mixed with green gram split and green gram #sprouts to make a crunchy tasty salad.

Carrot salad with Greengram sprouts

Ingredients :
3/4 CupRed Carrot grated
1 TbspGreen gram split
1 1/2 TbspGreen gram sprouts
1Green chilly, chop finely
1 TspCoriander leaves finely chopped
1/2 TspFresh crushed pepper
1/2 TspSalt [ adjust ]
1/2 TspLemon juice [ optional ]

Method :
Take grated carrot in a bowl.
Add green gram sprouts, washed green gram split and salt.
Mix well and allow to rest for half an hour.


After half an hour or just before serving add green chilly, freshly crushed black pepper and coriander leaves.
Adjust salt and mix well.

If you wish, a dash of lemon juice can be added.

Tasty and healthy salad is ready.
You can have it as a snack in the evening or with meal.
