( foxtail millet ) flour, fried gram, sesame with jaggery. It came out nice and the taste was superb.
Let me explain how to prepare these sweet balls from thinai flour.
Ingredients :
1/2 Cup : Thinai Flour
1/2 Cup : Fried gram ( pottukadalai )
1/2 Cup : Sesame ( till )
1/2 Cup ( adjust ) : Jaggery
2 : Cardamom
4 : Clove
3 Tsp : Honey
7 : Cashew nuts
4 : Almonds
5 : Dry Fig
3 Tsp : Ghee
Method :
Keep a heavy bottomed vessel on slow fire.
Dry roast fried gram, sesame, cashew nuts and almonds one by one separately and keep aside.
Grind fried gram, sesame, cardamom and cloves into nice powder.
Coarsely grind cashews and almonds.
Then add ghee in the same vessel and roast thinai flour till its aroma comes out.
Now add the ground powders, pounded jaggery into the kadai/vessel having roasted thinai flour.
Mix well.
Then add honey, mix well and make balls.
If the balls tend to break, add one more teaspoon of honey.
Now Enjoy!! yummy thinai pottukadalai urundai.
These sweet balls can be stored in an air tight container for two to three days.
