#NellikkaiJam [ #AmlaJam ] : #Nellikkai is called #gooseberry in English and #amla in Hindi. It is one of the richest source of Vitamin C.
It is extensively used in Ayurvedic medicines.
Ingredients :
Nellikkai : 10 to 12
Sugar : 1 cup
Salt : a pinch
Method :
Wash nellikkai thoroughly and take in a vessel.
Take a cup of water in a pressure cooker and place the vessel in it.
Keep on high flame.
Close the lid but do not put weight on.
Change burner position to SIM when steam start coming out.
Allow to steam cook for 10 minutes.
Remove the seeds from steamed nellikai and allow it to cool down to room temperature.
Grind in a mixer grinder into a coarse paste.
The amount of this paste comes around 1 cup.
Transfer into a microwave safe glass bowl.
Add sugar and a pinch of salt.
Mix well and microwave HIGH for 5 minutes.
In between after 3 minutes take out and mix well.
Again after 2 minutes take out and mix well.
Again microwave for 4 minutes.
In between once take out and mix with ladle.
Now it would have come to required consistency.
The color would have changed to pale honey color and could easily rolled into a ball.
Transfer into a glass jar. Close the jar after cools down to room temperature.
