#CorianderBuckwheatSoup : I regularly go for a 40 minutes brisk walk in the evenings. I would like to have something hot to make me warm in this cold weather. So after coming back from walk I used to prepare a hot #soup with different ingredients. Yesterday I made a soup using cooked buckwheat, green coriander seeds, mushroom and coriander leaves.
Ingredients :
1/4 cup Buckwheat cooked
1 Tsp Coriander green seeds ( optional )
3 Tsp Coriander leaves nicely chopped
1 Tsp Carrot nicely chopped
1 Mushroom, chop nicely
1/4 Tsp Salt
For Seasoning :
roasted garlic pieces, coriander leaves and pepper powder.
Method :
Take a cup of water in a vessel and add cooked buckwheat.
Mix well and bring it to boil.
Then allow to simmer for 3 minutes.
Now add chopped carrot.
Coarsely grind coriander seeds and leaves in a mixer grinder.
When carrot is three fourths done, add the coarsely ground coriander mixture.
Mix well and allow to simmer for 3 minutes.
Now add mushroom and cook for a minute. Finally add salt.
Transfer into a serving bowl and top it with given seasonings.
Enjoy hot hot soup on a cold winter evenings!!
