Varagarisi Payasam

#VaragarisiPayasam #KodoMilletPayasam : #VaraguArisi or #Varagarisi or simply #Varagu is known as #KodoMillet in English. #Millet are small seeded grasses that grow in dry zones. Millets are one of the oldest foods known to humans.


Millets are very nutritious, non-glutinous and non acid forming foods.
Moreover millets are rich sources of minerals like iron, calcium, phosphorous, magnesium and potassium.
It can be cooked in the same way just like rice.
Here lets see hoe to prepare a very tasty dessert, Payasam.

Varagarisi Payasam { Kodo Millet Payasam ]


Ingredients :
Varagarisi ( Kodo Millet )                  : 1 Tbsp
Milk                                                  : 1 1/2 Cup
Salt                                                   : a pinch
Sugar                                                : 3 Tbsp ( Adjust )
Cardamom powder                           : 1/4 Tsp
Saffron                                              : 4 to 6 strings
Almond shavings                               : 2 or 3 Tsp
Cashew nuts                                      : 4

Method :
Take varagarisi in a small vessel. Wash 2 times and add 1/2 cup of water.
Take a cup of water in a pressure cooker. Keep the vessel containing washed varagarisi in the cooker.
Close and put weight on. Cook on high flame for 3 whistles.
Then keep the burner at SIM and cook for 3 minutes.
Keep aside.


Take milk in a vessel and bring it to boil.
Now add cooked varagarisi and mix well.


Adjust the burner to SIM position and cook for 7 minutes.
Keep stirring at regular intervals.
Now add sugar.
Mix well to dissolve sugar.
Let it boil for 10 minutes keeping the burner at SIM.
Add saffron and cardamom powder.

Varagarisi Payasam { Kodo Millet Payasam ]

Transfer into a serving bowl and top it with almond shavings.

Varagu Arisi Pongal

#VaraguPongal #VaragarisiPongal : #Varagarisi is known as #Kodomillet in English. #Millet are rich sources of minerals and vitamins. The grains are very small and usually have small stones and sand particles. It has to be cleaned thoroughly before cooking. The method of preparation is just like rice #pongal but the taste is better than rice pongal.

Varagarisi Pongal


Ingredients:
3/4 cupVaragarisi [ Kodo millet ]
1/4 cupGreen gram split
1 1/2 TspCumin seeds
1 TspBlack Pepper
1/2 TspBlack Pepper powder
1/4 TspTurmeric powder
1 or 2Green chilly, split lengthwise [ optional ]
10 - 15Curry leaves
3 clovesGarlic, nicely chop
1 TspGinger nicely chopped
To Temper:
4 to 5Cashew nuts
1 TspCumin seeds
1 TspBlack Pepper
8 - 10Curry leaves
3 TspGhee

Method :
Take cleaned varagu arisi, washed green gram and all other given ingredients in a pressure cooker.
Add 3 1/2 cup of water.
Mix well with a ladle and close the lid with weight on.
I cooked over an induction stove.
Set temperature at 800 and allow to cook for 3 whistles.
Then reduce the temperature setting to 120 and cook for 5 minutes.

Open the cooker after it runs out of steam.
Now heat a kadai with ghee.
First fry broken pieces of cashew nut till it turns golden color and then transfer into prepared pongal.
Splutter cumin and then add pepper corns and curry leaves.

Varagu or Varagarisi [ Kodo Millet ]

Transfer into the cooker with hot pongal and mix well with a ladle.

Take hot hot pongal in a plate and add 1 or 2 Tsp full of ghee.

Relish with coconut chutney


or pongal thuvaiyal


or onion sambar.
