Thinai-Murungai-keerai-Urundai

Three or four days back I made ghee from butter and as usual finally added drumstick leaves into the simmering hot ghee. Drumstick leaf - Murungai keerai has to be added at the end to get an aromatic ghee. Everyone likes the crispy drumstick leaves fried in ghee and also its aroma. Then I transferred the ghee into a container. Usually I used to make kesari in the vessel in which the ghee was made. But this time I wanted to prepare something different and healthy. Suddenly an idea struck me, and I thought if I include ghee fried crispy murungai keerai to make a sweet urundai then the sweet would be a healthy snack and everybody would consume murungai keerai without any complaints. Then I decided to make the sweet with jaggery. I know from my previous preparations that Thinai and jaggery combination goes well and loved by all. That is why I have decided to prepare a tasty jaggery sweet from thinai and murungai keerai.


 #FoxtailMillet is known as #Thinai [ தினை ] or #thinaiArisi [ தினை அரிசி ] in Tamil. It belongs to minor #Millet.
The botanical name is Seteria italica.

All millet [ kodo, foxtail, finger. proso, pearl and little millets ] are gluten free and show high antioxidant activity.
Foxtail millet may help in controlling blood sugar and cholestrol.
Foxtail millet is a very good source of protein, iron, significant amount of calcium and other minerals.
It is also rich in fiber compared to other cereals.

Nutrients of Millet

Thinai is sweeter in taste and more suitable for preparing sweet dishes.
#Murungaikeerai [ #DrumstickLeaf or #MoringaLeaf ] is rich in protein [ 9.4 g per 100 g of raw leaves ], 
vitamin A [ 378 ug per 100 g of raw leaves ]
minerals especially calcium [ 185 mg per 100 g of raw leaves ] and 
iron [ 4 mg per 100 g of raw leaves ]. 
The amount of vitamin A present in murungai keerai is 4 times that of carrot. It doesn't loose much of its nutrients even when the leaves are cooked on high temperature.
After learning about health benefits of foxtail millet  [ thinai ] and murungai keerai  I am sure what I am going to present here would be a healthy sweet snack.


Thinai Murungai keerai Urundai [ Foxtail millet balls ]


Ingredients :
3/4 cupFoxtail Millet
1/4 cupGreen gram split
3 - 4Cardamom
3 - 4Dates Dried [ Sultana or raisins ] 
5 - 6Cashew nuts
1/3 cupMurungai keerai
small pieceNutmeg
1/2 cupJaggery
A pinchSalt
4 - 5 TspGhee


Method :
Break cashew nuts into small pieces.
Chop dried dates into small pieces.
Pluck murungai keerai from its stem and wash.
Pat dry with a clean & dry cloth.
Set aside.

Heat a kadai on a stove over medium flame.
Dry roast thinai [ foxtail millet ] till it gives out aroma.
Transfer into a plate or bowl and set aside.
Now in the same kadai add split green gram and dry roast till it turns golden brown color.
Transfer into a plate/bowl.
Allow to cool down.
Take roasted thinai, split green gram, cardamom, nutmeg and salt.
Grind into a nice flour using a mixie grinder.
Transfer into a bowl and keep aside.

Heat kadai on stove over a low flame.
Add 1 Tsp of ghee and roast chopped dried dates [ sultanas ] till it turns golden color.
Transfer into bowl containing the flour we made earlier.
In the same kadai add another teaspoon of ghee and roast cashew nuts till it becomes golden color.
Transfer into the same bowl.
Again in the same kadai add 2 teaspoon of ghee and roast murungai keerai on slow fire till the leaves become crisp and brittle.
Take care not to allow the leaves to change its color.
Transfer into the same bowl.
Mix well and allow to cool down.

In the meantime take jaggery in a vessel and add 2 Tbsp water.
Heat on slow flame till it dissolves completely in water.
After dissolving jaggery boil it for 2 minutes and turn off stove.
The jaggery syrup should be thick and no need to check consistency.
Add 3 Tbsp of jaggery syrup into the flour mix and mix well with a long spoon.
Then knead with hand into a soft dough and if required add some more jaggery syrup.
Divide the dough into small portions and make into small urundai [ balls ] after dusting hand with rice flour.
Neatly arrange in a clean and dry container with lid.
Enjoy tasty, healthy and yummy thinai murungaikeerai balls!!!

It can be stored for a week in normal temperature.

Thinai Sweet Paniyaram

#ThinaiInippuKuzhiPaniyaram #FoxtailMilletSweetPaniyaram : #Thinai is known as #Foxtailmillet in English. Other names of foxtail millet Italian millet, German millet, Chinese millet and Hungarian millet. Thinai has been consumed in the form of gruel by Tamils since time immemorial.
Thinai grains have to be powdered in a mixer grinder.
If thinai flour is available then it can be used directly.

Pre planning            : 1/2 hour
Preparation time     : 15 to 20 minutes
Cooking time          :  7 - 9 mins
No. of paniyaram    : 7 -8 approx.

Thinai Inippu Kuzhi Paniyaram [ Foxtail Millet Sweet Paniyaram ]



Tamil : Thinai English : Foxtail millet or Italian millet

Ingredients :
1/4 cup                              Thinai
1/4 cup                              oats soft
1/4 cup                              Rice flour
1/4 cup                              Coconut scraping
1/4 Tsp                             Cardamom and nutmeg powder
1/4 cup                             Jaggery
1 Tsp                               Gingelly oil [ Till/Sesame oil ]
1 pinch                             Salt
1 pinch                             Cooking soda

oil and ghee to make paniyaram.




Method :
Grind thinai into a nice powder using mixer grinder.
Dissolve jaggery in hot water and filter through a tea filter.
Let it cool down to room temperature.
Combine all the given ingredients except cooking soda in a vessel.
Mix well with a ladle adding jaggery mixed water.
The batter should be like that of idly batter [ idli maavu ].
Let it stand for half an hour.



Then heat kuzhi paniyara kal/pan on medium heat.
Mix a small quantity of gingelly oil and ghee in a small bowl.
Add drops of this oil-ghee mix in each pit of the paniyara kal.
Now dissolve cooking soda with 1 Tsp of water and add to the batter. Mix well.
When the kal becomes hot, half fill each pit with batter.

Thinai Inippu Kuzhi Paniyaram [ Foxtail Millet Sweet Paniyaram ]

Sprinkle few drops of oil-ghee mix over and along the sides of each paniyaram.
Flip each one using a spoon when edges of paniyaram becomes golden color.
Cook well and transfer into a serving bowl.

Thinai Pidi Kozhukattai - Fox Tail Millet Dumpling

Yesterday night I did not know what to prepare for dinner.
I simply opened the fridge and scanning all the racks what are all the thing available.
Then I saw a small cup containing rice batter saved while grinding for Idly some two days back.
Suddenly got an idea. Immediately soaked 1 tblspoon of green gram dhal and 2 tsp of urad dhal.
Then started preparing fox tail millet pidi kozhukattai.

#Millet are crops of rain fed areas. They are highly nutritious and rich in minerals like iron, magnesium, potassium, and phosperous. they are non-glutinous not acid forming food.
We can try these millets as an alternative to rice.
#Thinai is known as #FoxtailMillet in English. Now let me present the recipe of a dumpling with this millet.

Thinai Pidi Kozhukattai [ Foxtail Millet Dumpling ]


Ingredients :
Rice flour batter                             : 1/3 cup
Thinai flour                                    : 1/3 cup
Coconut scrap                                : 1/3 cup
Ground nut                                     : 1 tblspoon
Urad dhal                                        : 2 tsp
Green gram dhal                               : 1 tblsp


To Temper :
Mustard seeds                                 : 1/2 tsp
Red chilly                                         : 2 ( adjust )
Gram dhal ( channa dhal )                 : 1 tsp
Asafoetida                                        : 1/4 tsp
Salt                                                  : 1/2 tsp ( adjust )
Oil                                                   : 2 tsp

Method : 
Soak green gram dal and urad dal for 15 minutes.


Take rice flour, thinai flour and coconut in a wide mouthed vessel.


Pound ground nuts ( pea nuts ) and split into halves.


Keep a kadai with oil on slow flame.
Splutter mustard seeds and then add broken red chillies, gram dal, ground nuts and curry leaves in the order.
When the nuts are fried well add into the vessel having other ingredients.
Completely drain water from soaked dal and add into the vessel


Knead well with enough salt.
In the meantime keep Idly pot with 2 cups of water on stove over medium flame.

Take a small amla size kneaded dough and close the fist pressing the dough with fingers.
A dumpling is made.
Arrange on a idly plate smeared with oil.
Make like this and fill up the idly plate.
Keep the idly plate inside the idly pot and close with lid.

Thinai Pidi Kozhukattai [ Foxtail Millet Dumpling ]

Allow it to cook. Roughly takes 15 minutes.

When its ready transfer into a serving plate.

enjoy with tomato sauce or pudhina chutney or without any chutney.
