Here let me present the method of preparing milk payasam using kuthiraivaali.
Ingredients :
1/8 cup Kuthiraivaali [ Barnyard millet ]
1/4 cup Sugar [ Adjust ]
1 1/4 cup Milk
1 pinch Salt
2 Cardamom
1 Tsp Almond shavings
6 kismis
Method :
Pressure cook kuthiraivaali by adding 1/3 cup of water.
Cook for three whistles on high flame and then at SIM for 3 minutes.
Take out after the steam has completely subsided.
Take milk in a wide mouthed vessel and keep on an induction stove at 500 temperature setting.
Bring it to boil and then reduce the temperature setting to 120.
Mash the cooked kuthiraivaali with a ladle and slowly add to the boiling milk.
Add a pinch of salt, crushed cardamom and mix well with a ladle.
Allow to simmer for 5 minutes.
Now add sugar and mix well.
Let it simmer for 8 to 10 minutes.
Turn of the stove and transfer into a serving bowl.
Garnish with almonds and kismis.
Enjoy after a good meal!!
