Broken Maize Porridge

Broken Maize ( Corn ) Porridge is a healthy drink and very easy to make.
The given ingredients are just enough to prepare a cup of Porridge - Kanji.

Broken maize [ corn ] porridge

Ingredients :

broken maize ( corn sooji )

1/4 Cup                                    Broken Maize ( Corn )
3 Cloves                                   Garlic
1/4 Cup                                    Milk
1 Cup                                       Water
1/4 Tsp                                     Salt

For Seasoning :
Pepper Powder

Method :
Take a cup of water in a vessel.
Heat over a medium flame.
When bubbles are formed at the bottom and on the sides of the vessel, add broken maize and nicely chopped garlic.


Allow to simmer until the grains become soft.


Now add salt and milk.
Simmer for two more minutes.
Switch off the stove.


Transfer into a serving bowl and top it with pepper powder.
Enjoy hot porridge ( kanji ) with papad or pickle.

Broken Maize Pidi Kozhukattai

#BrokenMaizeDumpling : Broken maize is available in super markets. I usually make porridge ( kanji ) with it. Sometimes I used to make neer kozhukattai using broken maize and rice batter. This time I tried to make #kozhukattai ( #dumpling ) with rice batter and steam cooked in an idly maker. Let me present how these tasty broken maize dumplings are made.

Ingredients :

broken maize

1/4 Cup                                    Broken Maize
1/4 Cup                                    Rice Batter ( saved while grinding  for idly )
1/4 Cup                                    Rice Flour
1/4 Cup                                    Coconut scrap
1 ( adjust )                                Red Chilly
2  Tsp                                       Urad Dhal
3 Tsp                                        Gram Dhal
4 Tsp                                       Ground nut
5                                              Cashew nuts ( optional )
10                                            Curry leaves
1/4  Tsp                                   Asafoetida
1/2  Tsp                                   Salt
1/2  Tsp                                   Mustard
1/2  Tsp                                   Cumin
2  Tsp                                      Oil

Method :
Take Rice batter, Rice flour and Broken maize in a wide mouthed bowl / basin.


Keep a kadai on slow flame with 2  Tsp oil.
When oil becomes hot splutter mustard seeds and cumin.
Then add broken pieces of red chilly, asafoetida ( perungayam ) and then add curry leaves.
Fry for a few seconds and then add urad dhal, gram dhal, broken pieces of cashew nuts and slightly pounded ground nuts.
Fry till dhals become golden color.


Transfer into vessel with batter.
Add salt and mix well. If needed add lukewarm water and prepare the dough.


Keep Idly maker with 2 cups of water on high flame.
Smear Idly plate with oil and keep aside.
Now to make kozhukattai ( dumpling ) take a small ball of dough in your palm and press with fingers.

Prepare kozhukattais and arrange neatly on oiled idly plate.

Keep the plate in idly maker, close with lid and steam cook for 10 minutes.


Take out a piece and check whether the kozhukattai is cooked well.
If done transfer into a serving bowl.
If not, cook for another 3 to 5 minutes.

Enjoy with tomato sauce or green pudhina chutney.

A very good evening snack or can be included in your morning breakfast or dinner.

Udaitha Makkacholam Neer Kozhukattai - Broken Maize Neer Kozhukattai

#BrokenMaizeNeerKozhukattai : I tried this #neerkozhukattai with broken maize ( corn ) and it came out very well but took longer time to cook than neer kozhukattai.
I saved 1/3 cup of wet rice batter while grinding for idly in fridge. I made use of it with broken maize to make tasty kozhukattai.


Ingredients :
Wet rice batter                              : 1/3 cup
Broken maize                                : 1/3 cup
Coconut scrap                               : 1/3 cup
Salt                                               : 1/4 tsp ( adjust )

Ingredients for tempering :
Mustard                                        : 1/4 tsp
Cumin seeds                                  : 1/4 tsp
Red chill                                         : 1 ( adjust )
Curry leaves                                   : 8 to 10
Pepper powder                               : 1/4 tsp ( adjust )
Salt                                                  : a pinch



Method :
Mix all the ingredients and knead well in a wide mouthed vessel.


If needed add lukewarm water to make a thick dough.
It should be like chappathy dough consistency.
Make small balls out of the prepared dough.


Now boil two cups of water in a vessel.
When the water starts boiling, add the balls into the water one by one slowly.


Wait for 2 seconds.
Now stir the boiling kozhukattais with a long handled laddle.
Reduce the flame & keep the burner knob at SIM position.
Allow it to cook well for 15 minutes.
Check whether its cooked well.
If its not done allow for some more time to cook well.
Once its done transfer all kozhukattais from the water into a bowl.



Now keep a kadai on a slow flame with a Tsp of oil.
Temper 1/4 Tsp of mustard. Once the mustard seeds splutters add broken red chilly, cumin seeds and curry leaves.
Then add asafoetida and then the kozhukattais and 1/4 Tsp of freshly pounded pepper corns.
Stir well for a second. Transfer into a serving bowl.


Now kozhukattai is ready to eat. This dish does not require a side dish.

The water used for cooking kozhukattai would have turned into a porridge. This can be enjoyed with jaggary or salt.
