Broken Wheat Thiruvadhirai Kali

#BrokenWheatthiruvadhiraiKali : #Kali ( pudding ) is thicker version of koozh ( porridge ) usually prepared with broken rice and green gram dhal. My mother used to prepare using a heavy bottomed vessel. Sometimes it comes out very well and sometimes not so good. It is a dish prepared with rice, green gram dhal and jaggery. The consistency of jaggery syrup is very important to make a proper kali. After so many failed attempts she found out a method to make #thiruvaadhiraikali using pressure cooker.
Here I used Broken wheat to prepare thiruvadhirai kali. Let us see the preparation.

Broken wheat thiruvadhirai kali

Ingredients :

broken wheat

3/4 Cup                                 Broken Wheat
1/4 Tbsp                                Green gram dhal
1/2 Cup                                  Coconut Scrap
1/2 Cup                                  Jaggery [ adjust ]
3                                            Cardamom
1 Pinch                                   Salt
2 Tsp                                      Ghee

Method :
Dry roast broken wheat until it gives out nice aroma and slightly turns to golden color.
Transfer onto a plate.


Then dry roast green gram dhal until it turns golden color.
Coarsely grind using a mixer grinder.
Take jaggery in a vessel. Add 1/2 Cup of water and keep on medium flame.
Stir well with a ladle to dissolve jaggery in water.
Turn off the stove when jaggery has completely dissolved in water.
Strain through a tea filter to remove small stones, sand particles and impurities present in jaggery.

Take roasted broken wheat, coarsely ground green gram dhal, coconut scrap, salt and cardamom powder in a cooker.
Totally 2 cups of liquid is required to cook.
So take the prepared jaggery mixed water and add enough water to make it 2 cups.


Close the lid and put on weight. Cook for 3 whistles and 5 minutes at SIM.
Wait till the steam completely subsides.
After opening the cooker add ghee and mix well with a ladle.
Yummy tasty kali is ready. Enjoy!!...

Broken Wheat Payasam

#BrokenWheatPayasam : #BrokenWheat is roasted adding little ghee till aroma comes out. Then roasted broken wheat is cooked in milk. Sugar is added and flavoured with cardamom or nutmeg or maze. Now we will see the preparation of payasam with broken wheat.

Broken Wheat Payasam

Ingredients :
1 Tbsp                                  Broken Wheat [ daliya ]
1 pinch                                 Salt
1 Tbsp                                 Sugar [ adjust ]
1 Cup                                  Milk
4                                         Almond, grate nicely
A small piece                       Maze and nutmeg
1/2 Tsp                               Ghee

Method :
Heat a kadai over a medium flame with 1/2 Tsp of ghee.
Roast broken wheat until it gives out nice aroma and turns to golden color.


In the meantime heat milk in a vessel on another burner.
Now add roasted broken wheat and allow to simmer until broken wheat becomes soft.
When broken wheat is cooked well, add sugar.
Mix well and simmer for 3 to 5 minutes.
Finally add powdered maze and nutmeg powder.
Transfer into a serving bowl.
Garnish with almond shavings.

Broken Wheat Payasam

Wow!! nobody could make out what payasam it is!!
So tasty and yummy!!!..

Note : Cardamom powder can be added instead of nutmeg and maze.

Broken Wheat Idly

#BrokenWheatIdly [ #DaliaIdly ] : I made rawa idly sometime back and came out nicely which I have shared it here also. Two days back, for a change, I tried idly using broken wheat ( Dalia ) and it was a great success. It was even more tastier than rawa idly. Here comes the recipe:

Ingredients :
1 Cup                                    Broken wheat ( Dalia )    
1/2 Cup                                    Curd
1 Sachet                                  Eno Fruit salt
3/4 Tsp                                  Salt ( Adjust )

To Soak :
1 Tsp                                     Black Gram dhal ( Urad Dhal )
2 Tsp                                     Gram Dhal ( Channa Dhal )


To add to Batter :
1/4 Cup                                Carrot grated
1                                          Onion, nicely chop ( Optional )
1 Tbsp                                 Capsicum nicely chopped ( optional )
1 Tbsp                                  Green peas ( Optional )

To Temper :
4                                          Cashew Nuts, break into pieces
1/2 Tsp                                Mustard seeds
1 Tsp                                   Gram dhal
4 Tsp                                   Split Ground nut ( Pea nuts )
10 to 15                               Curry leaves
1 Tsp                                   Ginger chopped nicely
1                                          Green chilly, chop nicely
1/4 Tsp                                 Asafoetida Powder ( Perungayam - Hing )
3 Tsp                                    Oil


Method :
Soak urad dhal and gram dhal in a small cup.
Take a wide mouthed vessel.
Add broken wheat, curd and salt. Mix well and keep aside.
If necessary add 1/4 to 1/2 cup of water.
The grains are bigger than sooji. So takes more time to get soaked.
Allow it to stand for 45 minutes.

After half an hour keep a kadai with 3 Tsp of oil and heat over a slow flame.
First crackle mustard seeds, then add cashew nut pieces, gram dhal and ground nut.
When dhals become golden color add asafoetida powder, curry leaves, chopped ginger and chopped green chilly.
Now add carrot pieces and green peas and saute for a few seconds.


Switch off the stove and transfer into the vessel containing broken wheat curd mix.


Mix well after adding soaked dhals and enough salt.
Add some water to get required consistency.

Keep Idly maker with 3 cups of water on high flame.
Apply oil over the pits of idly plate.
Now add Eno salt to the batter and mix well with a ladle.


Fill the pits of idly plate with prepared idly batter.
Keep inside the idly maker.


Steam cook dalia idlies for 10 minutes.
After ten minutes insert a clean tooth pick or knife into an idly to check whether the idly is cooked or not.
If the inserted toothpick/knife comes out without any batter sticking to it, the idlies are done.


Scoop out each idly using a flat spoon lubricated with water.


Enjoy with red garlic chutney or with


all time favorite coconut chutney.

Broken Wheat Porridge

#BrokenWheatKanji ( #Porridge ) is my all time favorite. It is very easy to make and very very tasty.
Let us see how to prepare this porridge.
Approximately 1 cup of porridge can be made from the given quantity of ingredients.
Preparation time    : Nil
Cooking time         : 12 - 15 min

Broken Wheat Kanji

Ingredients :
1/4 Cup                                     Broken Wheat
1/4 Cup                                     Milk
1 Cup                                        Water
1/4 Tsp                                      Salt

Method :
Take a cup of water in a vessel.
Heat over a medium flame.
When bubbles are formed at the bottom and on the sides of the vessel, add broken wheat.


Allow to simmer until the grains become soft.
It takes approximately 10 - 12 minutes to cook well.


 Now add salt and milk.
Simmer for two more minutes.
Switch off the stove.

Transfer into a serving bowl.
Enjoy hot porridge ( kanji ) with any pickle of your choice.

Broken Wheat Upma

#BrokenWheatUpma  #GodhumaiUpma  : We have already seen the preparation of Rice Upma 

and Kodo millet upma. Here let me present you the method of preparation of #Brokenwheat upma.

Upma prepared with the given ingredients is just enough for 2 persons.


Ingredients :


1 Cup                                     Broken wheat
2 Tsp                                     Salt
1                                            Onion, nicely chop
3 or 4                                     Green chilly, slit lengthwise
10 or 12                                 Curry leaves
1 Tsp                                      Ginger nicely chopped

Other nicely chopped Vegetables :
1 Tbsp                                     Carrot
1 Tbsp                                     Cabbage ( Optional )
1 Tbsp                                     Capsicum ( Optional )
1 Tbsp                                      Green Peas

To Temper :
1 Tsp                                      Mustard seeds
1 Tsp                                      Black gram ( Urad Dhal )
3 Tsp                                      Gram dhal
1 small piece                           Asafoetida ( Perungayam - Hing )
3 Tsp                                      Oil

Method :
Keep a heavy bottomed vessel or kadai on a stove with slow flame.
Add oil and crackle mustard seeds.
Then add asafoetida piece and dhals. Allow the dhal to become golden color.
Now add curry leaves and green chillies.
Saute for 1/2 minute and then add onion.
Saute onion until it turns to pale pink color.
Now add cabbage and carrots.
Keep stirring with a ladle for a minute.
Then add capsicum and green peas. Saute for 1/2 minute and then add 2 cups of water and salt.


Keep the fire at HIGH and add washed broken wheat when water started boiling.
Now reduce the fire and keep the vessel closed with a lid.
Allow to cook till the broken wheat become soft. It takes around 10 minutes to cook.


Keep stirring at regular intervals and close the lid.
Now the upma is ready.


Serve hot with coconut chutney

or any chutney of your choice


or pickle.

I like to have uppuma with jaggery.
