Carrot-Beans-Poriyal

#CarrotBeansPoriyal #CarrotBeansStirfry : Generally I used to prepare carrot poriyal only with grated carrot only. But in hotels chopped carrot poriyal is always being served during the meal for lunch and it tastes differently from poriyal done with grated carrot. I wanted to try that carrot poriyal of hotel style one day. Finally, it happened and I made it a few days back. I prepared carrot poriyal using chopped carrot, beans and green peas. I have included beans and green peas to make the poriyal colorful. Here comes the method.

Carrot Beans Poriyal [ Carrot Beans Stirfry ]


Ingredients :
1 cupCarrot chopped into 1/4 inch cubes
7 - 8Beans, chop nicely
1 TbspGreen peas
1 TbspOnion chopped
1/4 TspRed chilly powder
1/2 TspSambar powder
1 TbspCoconut scraping
1/2 TspSalt
To Temper :
1/2 TspMustard seeds
1 TspBlack gram split
2 - 3Red chilly
1 TspOil


Method :
  • Take carrot, beans and green peas in a pressure cooker.
  • Add Sambar powder, red chilly powder, salt and 1/2 cup of water.
  • Close the lid and put weight on.
  • Cook for a whistle on high flame and turn off the stove.
  • Immediately release the steam and transfer cooked vegetables into a bowl.
  • Now heat a kadai on a stove over medium flame with oil.
  • After crackling mustard add red chilly pieces and black gram split.
  • Roast till it becomes golden color.
  • Then add onion and saute until it changes transparent.
  • Now add cooked vegetables and adjust salt.
  • Stir well to remove excess water.
  • Finally add coconut scraping and stir for a while.
  • Transfer into a serving bowl.
  • Colorful tasty and healthy carrot beans poriyal is ready to eat.
  • Goes well with all mixed rice, sambar rice and rasam rice.

Carrot Thuvatal

Carrots are available in orange red and  also in variety of colors. Orange color carrots are available through out the year. But red ones are seen only during winter. Multi color varieties are available in foreign countries.



Carrot thuvatal is one of the easiest and quickest recipes.


Carrot Thuvatal [ Carrot Stir Fry ]



Ingredients :


Carrot grated                                       : 1 cup
Onion                                                 : 1 thinly chopped
Green chilly                                         : 1 cut into small pieces
Coriander leaves                                  : 2 tsp diced ( can add more )
Sambar powder                                 : 3/4 tsp [ adjust ]
Mustard seeds                                    : 1/2 tsp
Urad dhal                                           : 1 tsp
Oil                                                     : 1/2 tsp
Coconut Scrap                                  : 1 Tsp [ optional ]
Salt                                                    : 1/2 tsp


Method :
Keep a kadai with oil on a stove over slow flame.
Splutter mustard seeds and then add urad dhal and roast until urad dhal turns golden color.
Now add green chilly pieces and coriander leaves.
Saute for few seconds.


Now add onion and saute for few seconds.

Then add sambar powder and saute until its raw smell goes off.
Now add grated carrot and required amount of salt.


Mix well and keep the kadai closed with a lid till the carrot becomes soft.


Carrot takes one or 2 minutes only to cook.


Transfer into a serving bowl and garnish with coriander leaves.

Carrot Poriyal [ Carrot Stir Fry ]

A great side dish for sambar

and rasam rice.
