Cauliflower Manchurian

#CauliflowerManchurian : #Cauliflower  is a low calorie food and rich in Vitamin C and B6. Cauliflower contains sulforaphane which researchers believe eliminating cancer stem cells.
#Cauliflower is low in fat, low in carbohydrates but high in  dietary fiber, water, and  possessing a high  Nutrient density.
Cauliflower contains several  phytochemicals, common in the cabbage family, that may be beneficial to human health.
Sulforaphane, a compound released when cauliflower is chopped or chewed, may protect against cancer
Other glucosinolates, Carotenoids and Indole-3carbinol, a chemical that enhances DNA repair, and acts as an estrogen antagonist, slowing the growth of cancer cells.

Boiling reduces the levels of these compounds, with losses of 20–30% after five minutes, 40–50% after ten minutes, and 75% after thirty minutes.
However, other preparation methods, such as steaming, microwaving, stir frying, have no significant effect on the compounds. A high intake of cauliflower has been associated with reduced risk of aggressive prostate cancer.

It takes very less time to cook and everybody likes fried cauliflower with batter & spiced up with tomato sauce.
I personally not a great fan of fried recipes. But once in a while can indulge in this sort of food to satisfy our taste buds!! Here comes the recipe.

Cauliflower Manchurian

Ingredients :
1 cup                               Cauliflower florets

For Batter :
1/2 cup                             Besan [ can also be replaced with maida ]
2 Tbsp                              Rice flour
1 Tbsp                              Corn flour
1/4 Tsp                             Red chilly powder
1/4 Tsp                            Cumin powder
1/2 Tsp                             Salt

To Marinate :
3 Tsp                               Soya sauce
1 Tsp                               Cumin powder
1/4 Tsp                            Red chilly powder [ adjust ]
1/4 Tsp                            Salt [ adjust ]

To Saute :
1                                     Onion, nicely chopped
2                                     Green chilly, split lengthwise
8                                    Curry leaves
2 Tbsp                           Tomato sauce
1 Tsp                             Soya sauce
1/4 Tsp                          Salt [ adjust ]
1 Tsp                             Oil

1 cup oil to fry cauliflower.

Method :
Take the ingredients to marinate in a vessel.
Mix well. Add cauliflower florets and stir well to coat with marination.


Keep aside for 45 minutes.

After 45 minutes heat a kadai with oil over a slow flame.
Now prepare batter in a wide mouthed vessel with the given ingredients adding 1/4 cup of water.
Make a batter of dosai consistency.
When oil becomes hot dip each floret in the batter and slowly drop into oil.
Fry until it turns golden brown color.


Take out and allow to stand over a kitchen paper.


Like this way fry all the florets in batches. Keep aside.


Now heat a kadai with 1 Tsp and saute green chilly, onion and curry leaves for 2 minutes.
Then add tomato sauce and soya sauce.
Add enough salt and simmer for a minute.


Put fried cauliflower florets.
Stir well and turn off the stove.


Transfer into a serving bowl.
Garnish with coriander leaves.

Note : actually the batter is prepared with maida only. But I do not want to use refined flour. So I used besan in place of maida.
