Modhakam-Spicy-Stuffing

#UlunduPooranam #BlackLentilSpicyStuffing : This stuffing is used in the preparation of spicy #modhakam. #BlackGramDal [ #BlackLentil ] is a rich source of protein for vegetarian people. It is also a great source of Vitamin B, iron, folic acid, magnesium, calcium and potassium. It has both soluble and insoluble fiber that helps in digestion and prevents constipation.
We commonly use black lentil to prepare our famous breakfasts like idli, vadai and dosai.
This tasty and spicy stuffing can also be a great accompaniment to rasam or sambar rice.

black lentil stuffing

Ingredients :
1/2 cupBlack gram lentil
1Green chilly [ adjust ]
1/2 inch longGinger
1/2 TspSalt [ adjust ]
2 TspGingelly oil
1/2 TspMustard seed
1/4 TspAsafoetida
10 - 12Curry leaves

Method : 
Wash black gram lentil and soak in water for one hour.
After one hour drain the water completely and put into a blender.
Add green chilly, ginger piece and salt.
Grind coarsely and transfer into a bowl.

Heat idli maker or pressure cooker with two cups of water on a stove over high flame.
Grease the pits of the idli plates with oil and place lentil paste in the pits.
Close and steam cook for 10 minutes or until the lentil paste gets cooked.
If the lentil paste is steam cooked in a pressure cooker do not put weight over nozzle of the lid.

Transfer the steam cooked lentil into a bowl and crumble with hand.
Heat a kadai with 2 Tsp of oil on a stove over medium flame.
Crackle mustard seeds and then add asafoetida powder & torn curry leaves.
Now transfer crumbled lentil into the kadai.
Adjust salt and stir well.
Keep stirring for five minutes and turn off the stove.
Transfer into a bowl and allow to cool down.

Tasty nd spicy urad dal stuffing [ balck lentil stuffing ] is ready.
Make delicious modhakam using this spicy stuffing.
This stuffing goes well with rasam or sambar rice for lunch.

Modhakam - Spicy

#Modhakam Spicy : Generally  I used to prepare sweet modhakam only on Vinayakar chathurthi day. After a long time tried spicy modhakam with black gram pooranam as stuffing.
We need to plan well in advance to prepare modhakam as black gram lentil has to be soaked in water at least for an hour. After one hour drain the water completely and then grind into a coarse paste along with green chilly, ginger and salt. The lentil paste is steam cooked for ten minutes. The steam cooked black gram lentil paste is crumbled and stir fried with condiments to prepare the stuffing.
In the mean time the dough for outer covering has to be prepared from rice flour.
The stuffing has to be kept inside the rice flour dough and then steam cooked for 3 to 5 minutes.

Approximately 10 to 12 modakams can be prepared

Ingredients :
For stuffing :

For outer layer :
1/2 cupRice flour
1/2 cupWater
1 TspGingelly oil
1/4 TspSalt

Method :

After one hour drain the water completely and put into a blender.
Add green chilly, ginger piece and salt.

Take rice flour in a wide mouthed vessel and add salt & oil.
Mix well.
When small small bubbles appear on the bottom of the vessel add little by little hot water to the flour and mix well with a spatula.
Wait till the dough can be handled with hand. Knead into a tight dough.

Grease the idli plate and set aside.
Make cups out of the rice flour dough or flatten the dough.
Keep stuffing inside and close & make shapes creatively.

Make modhakam like this and arrange over the greased idli plate.

Heat idli maker with water over high flame.
Keep the idli plate with modhakams once the water starts boiling.
Steam cook for 2 to 3 minutes.

Transfer into a serving plate or serving bowl.
Tasty spicy modhakam is ready!! enjoy with Lord Vinayakas' blessings.

Modhakam - Dumpling

#Modhakam - #Kozhukattai - #Dumpling : Today you all must be celebrating Vinayagar Chathurthi in a grand manner. Wishing you all a very happy vinayakar chathurthi!! May Lord Ganesha bless you with health, wealth and prosperity!!!
It is customary to make Modhakam, a favorite of Lord Ganesha on this auspicious day. I also made Modhakam [ Kozhukattai ] as an offering to Lord Ganesha.

Modhakam [ Dumpling ]


Modhakam is a dumpling just like momos but the outer covering is done with rice flour.
The stuffing can be either sweet or savoury.
Now let me present the method of preparing dough for Modhak and the way to stuff pooranam inside it.

Ingredients :
1/2 cup                              Rice Flour
1/4 Tsp                              Salt
1 cup                                 Water
1 Tsp                                 Ghee
1 Tsp                                 Gingelly Oil

Required amount of Pooranam to stuff.
Oil to grease hands while making kozhukattais.

Method :
Take rice flour, ghee and oil in a wide mouthed vessel.
Rub with fingers to mix oil and ghee to the flour.

Heat a vessel with water until air bubbles appear at the bottom of the vessel but before reaching boiling point.
Add approximately 1/4 cup hot water and mix well using a spoon.
Add hot water little by little and make a tight dough.
Wait until it cools down a bit and will be able to handle with hands.
Knead well to make the dough smooth and roll small small balls.
 Grease both the hands. Keep a ball on your left palm.
Flatten it with the help of right hand to make it like a thin circular pancake.
Keep a ball of sweet pooranam at the center.


Fold the ends to cover the pooranam at the top like a money bag.
Remove any extra dough from the top.
Shape the top into a sharp pointed edge.

Modhakam [ Dumpling ]

Arrange on a greased steamer plate of an idly maker.
In same way make kozhukattais [ modhakams ] and fill the plate.

Heat an idly maker with water on a stove over HIGH flame.
When water starts boiling keep the steamer plate with kozhukattais [ modhakams ] inside and steam cook for 3 minutes.
If it is steamed more than the required time then the pooranam starts melting down.

Take out the plate and transfer steamed modhakams into a serving bowl / plate.

Hot and sweet modhakams are ready. Relish after offering them to Lord Ganesha!!

In the same way spicy modhakam can be prepared by stuffing spicy black gram stuffing inside the dough covering.
