Avaraikkai Thuvatal

#AvaraikkaiThuvatal - #BroadBeansStirFry : #Avaraikkai is called broad beans in English. There are many varieties of broad beans available in the market. I have used a thicker one here. This poriyal/thuvatal is also very easy to prepare just like beans thuvatal.

Broad Beans Stir Fry

Ingredients :

1/4 kg                                   Avaraikkai [ Broad Beans ]

Broad Beans [ Avaraikkai in Tamil ]

1/2 Tsp                                Sambar Powder
1 pinch                                 Turmeric Powder
1/4 Tsp ( Adjust )                 Salt
1 Tbsp                                 Coconut Scrap

To Temper :
1/2 Tsp                              Mustard Seeds
1 Tsp                                 Urad Dhal
1/2 Tsp                              Oil

Method :
Remove top and bottom and also the fiber present along the edges of avaraikkai.
Chop nicely into thin pieces.

Keep a cooker with 1/2 cup of water on a stove.
Add Sambar Powder, turmeric powder and salt.
Mix well and add avaraikkai.
Close the lid with weight ON.
Cook for a whistle and immediately release the steam by removing the weight.
Or by keeping the cooker under running water.

Open the cooker and transfer the cooked vegetable into a plate or bowl.

Keep a kadai with oil on a stove over medium flame.
Splutter mustard seeds and the add urad dhal.
When dhal has turned golden color add cooked vegetable and keep the flame at HIGH.

Stir fry cooked broad beans in a kadai

Stir continuously with a ladle to remove excess water.
Add coconut scrap and stir well for a few seconds only as the vegetable has already been cooked well.


Transfer into a serving bowl.

 A very good side dish for sambar rice and rasam rice.

Vegetable-Kothamalli-Koottu-Vegetable-Coriander-Lentil

#VegetableKothamalliKoottu - #VegetableCorianderLentil : koottu is a gravy generally prepared with vegetables, green gram lentil and coconut paste.
It is one of the dishes prepared for lunch.
Only few vegetables are suitable for koottu either separately or in combination with other vegetables.
The koottu which I have presented here is one of the best combination of vegetables and tastes very good with nice aroma of coriander leaves.

Vegetable Coriander Lentil

Ingredients :
Brinjal                                                : 1 small one
Drumstick                                           : 1/2 
Ridge gourd                                        : 1/2
Avaraikkai ( broadbeans )                   : 5
Kothamalli (coriander                         : 1/4 cup
leaves)

Coriander leaves chopped


Onion                                                : 1 small size(diced finely)
Garlic                                                :  2 cloves(diced finely)
Green gram dhal (Pacha paruppu)    : 1/4 Cup
Turmeric powder                              : a pinch
Sambar Powder                              : 1/2 Tsp
Salt                                                    : 1/2 Tsp [ Adjust ]

To grind :
Coconut grated                             : 4 Tsp
Cumin                                           : 1/4 Tsp
Rice flour                                      : 1/4 Tsp
Black Pepper                                :4 or 5 [ optional ]

For tempering
onion vadagam                                     : 1/4 Tsp                            
Oil for frying onion  vadagam                  : 1/2 tsp

Method :
In a pressure pan or cooker take the washed dhal.
Add a pinch of turmeric powder.
Add 3/4 cup of water. Close the lid and keep on high flame.
Allow for 3 whistles, then keep 5 minutes on SIM position.
Open the cooker when the steam completely gone.
Transfer into a bowl and keep aside.

Take sambar powder, salt, turmeric powder, chopped vegetables, diced onion & garlic in a pressure cooker.

Then add 1/2 cup of water and cook on high flame for just 1 whistle.

Open cooker immediately by lifting the weight to release the steam.

Now add finely chopped coriander leaves ( Kothamalli ), cooked dhal and coconut masala (paste). Mix well and adjust salt.

Cook for 2 to 3 minutes on medium flame without closing the cooker with lid.

Cook over medium flame for 2 to 3 minutes

Heat a kadai with oil and fry onion vadagam and pour it on the prepared koottu. 


Vegetable Kothamalli koottu

This amount is just enough for 3 persons.

Koottu has to be be mixed with white rice and enjoyed with sambar or pickle as side dish.
Can have as a side dish for sambar or kuzhambu or rasam rice.
