Dosai - Making Dosai

#Dosai : Dosai is the one of the most favorite dishes of many people. Here we will see the method of making dosai.


To make dosai we need either a non stick tawa or an iron one.
I used to make dosai using an iron tawa.

Prepare dosai batter and allow it to ferment for 8 hours.
To get crispy dosa add 1 tblsp of rawa ( sooji ) half an hour before start making.
Then keep a tawa on a medium flame.
When its hot wipe the surface of the tawa with an oil soaked cloth.
Pour a big ladle full of batter at the centre of the tawa.


Spread the batter evenly and try to make a perfect circle.
Now add few drops of oil over and along the outer layer of dosa.
Cover with a lid for few seconds.
No need to turn other side since we are closing it with a lid.
Then transfer onto a serving plate when it turns into golden color.
For next dosai also wipe with the same oil soaked cloth and spread maavu.

Note :
the ladle should be flat or take a small flat bottomed cup to  spread maavu on the tawa thinly.

Relish dosai with white coconut chutney or tomato chutney or sambar or red chilly chutny.

Note : For masal dosai make potato masala. When the dosai is ready, spread the masala on the dosai. Fold the dosai and trasfer to a serving plate.
