Vegetable-Kothamalli-Koottu-Vegetable-Coriander-Lentil

#VegetableKothamalliKoottu - #VegetableCorianderLentil : koottu is a gravy generally prepared with vegetables, green gram lentil and coconut paste.
It is one of the dishes prepared for lunch.
Only few vegetables are suitable for koottu either separately or in combination with other vegetables.
The koottu which I have presented here is one of the best combination of vegetables and tastes very good with nice aroma of coriander leaves.

Vegetable Coriander Lentil

Ingredients :
Brinjal                                                : 1 small one
Drumstick                                           : 1/2 
Ridge gourd                                        : 1/2
Avaraikkai ( broadbeans )                   : 5
Kothamalli (coriander                         : 1/4 cup
leaves)

Coriander leaves chopped


Onion                                                : 1 small size(diced finely)
Garlic                                                :  2 cloves(diced finely)
Green gram dhal (Pacha paruppu)    : 1/4 Cup
Turmeric powder                              : a pinch
Sambar Powder                              : 1/2 Tsp
Salt                                                    : 1/2 Tsp [ Adjust ]

To grind :
Coconut grated                             : 4 Tsp
Cumin                                           : 1/4 Tsp
Rice flour                                      : 1/4 Tsp
Black Pepper                                :4 or 5 [ optional ]

For tempering
onion vadagam                                     : 1/4 Tsp                            
Oil for frying onion  vadagam                  : 1/2 tsp

Method :
In a pressure pan or cooker take the washed dhal.
Add a pinch of turmeric powder.
Add 3/4 cup of water. Close the lid and keep on high flame.
Allow for 3 whistles, then keep 5 minutes on SIM position.
Open the cooker when the steam completely gone.
Transfer into a bowl and keep aside.

Take sambar powder, salt, turmeric powder, chopped vegetables, diced onion & garlic in a pressure cooker.

Then add 1/2 cup of water and cook on high flame for just 1 whistle.

Open cooker immediately by lifting the weight to release the steam.

Now add finely chopped coriander leaves ( Kothamalli ), cooked dhal and coconut masala (paste). Mix well and adjust salt.

Cook for 2 to 3 minutes on medium flame without closing the cooker with lid.

Cook over medium flame for 2 to 3 minutes

Heat a kadai with oil and fry onion vadagam and pour it on the prepared koottu. 


Vegetable Kothamalli koottu

This amount is just enough for 3 persons.

Koottu has to be be mixed with white rice and enjoyed with sambar or pickle as side dish.
Can have as a side dish for sambar or kuzhambu or rasam rice.

coconut masala for koottu

Ingredients :
Coconut grated                 : 3 tsp
Cumin seeds                     : 1/4 tsp
Rice flour                          : 1/4 tsp
Method :
Take all the ingredients in a mixie jar and run for few seconds without adding water.
Now add little water to make it into a smooth paste.

This masala (paste) is just enough for koottu prepared for 3 persons.

Paruppu Podi - Dhal Powder For Rice

#Paruppu #Podi : This is a mix of roasted lentils. A very good powder to mix with hot white rice adding a dash of ghee or gingelly oil [ till / sesame oil ].

Ingredients :
Thuvar Dhal                            : 1/4 cup 
Gram Dhal                              : 1/4 cup
Fried Gram ( Pottu Kadalai)    : 1/4 cup
Red Chilly                               : 4 to 5( Add 1 or 2 more if needed )
Salt                                         : 2 tsp
Pepper corn                            : 4 or 5
Oil                                           : 3 tsp
Garlic                                       : 6 cloves
Flax seeds                                 : 1tbsp(optional)
Curry leaves powder                  : 2 tbsp(optional)

Frying Red Chilly in a kadai

Method :
Keep a kadai with 1 tsp of oil on a slow flame.
Add red chillies and fry well and keep aside.
First stir fry thuvar dhal till it turns golden brown and keep aside.
Add 1 tsp oil and fry gram dhal also like above.
Now fry well fried gram and pepper without oil.
If flax seeds available roast it without oil for 2 minutes only.
Finally fry salt also in kadai without oil to remove any water content.



Let all the ingredients come to room temperature.
Grind all the ingredients except fried grams and garlic.
After grinding coarsely add fried grams. Run the mixie and grind well.
Now add the garlic and run mixie.
once garlic is added run mixie for few turns, stop and then run.
Once garlic is mixed well with the powder.
Transfer the whole content into a plate or basin.
Allow the powder to come to room temperature and then store in an airtight container.



Note : To add more value to the podi add 3 tsp of dry curry powder and mix well.

Take hot whit rice in a plate and put enough paruppu podi. Over it pour a tsp full of ghee or gingelly oil ( till/sesame oil ) mix well with hand.
Have with sambar or pappad.
